Just made some “healthy” pancakes to start my day. Added one banana (half smashed, half sliced), 2 tsp baking powder, 1 tsp vanilla, splash of lemon and 2 Tbsp flax to my bisquick pancake batter (only used 1 egg instead of the recipe’s 2). YUM!!
What do you add to your pancakes?
So I wanted to make something cute for my friend’s baby shower. She’s having twin boys. I searched pinterest and google images. There are a lot of ideas out there and a lot of great stuff – problem is – I didn’t want to deal with gumpaste or fondant to make the designs. So I used animal crackers!
I made chocolate cupcakes with vanilla buttercream frosting. I dyed half the frosting blue and used two different types of sprinkles to add more color. The banners were really simple to make. After googling twin quotes and sayings, I made up my own (I wanted something short and sweet). I then printed it on cardstock and cut them into strips. I taped them to blue and yellow colored toothpicks and then made the triangle cut at the ends. What do you think?

I just couldn’t let Cinco de Mayo go by without a proper food fiesta. By now you know how much I love America’s Test Kitchen and their recipes. Well, their last email included recipes for Carnitas, Margaritas, and Guacamole Salad. Add a little Spanish rice, corn tortillas, radish & cilantro garnish and you’ve got a complete Mexican meal!
My one word of advice – plan a day or two ahead. I went to the store the morning of and they were out of limes! I used some lime juice from concentrate, but it’s just not the same as having fresh lime and lime zest.
