So I woke up this morning to an epic fail on the meringue. Not only had it weeped, but it was beading pretty badly.
I thought about keeping it on and presenting it as is, but as my husband said, “you’re not going to be happy.” So I asked him very kindly to pick up some heavy cream when he made the grocery run.
Meringue topping was scooped off and replaced with a lovely piped whipped cream:
- 1 cup heavy cream
- 1/2 tsp vanilla extract
- 2 Tbsp confectioner’s sugar (icing sugar)
- Beat on high until soft peaks form
- Scoop into piping bag fitted with large round tip
- Pipe dots around edge of pie and make your way towards the center
Competition was tight. I won by 1 point gained by having the best presentation!
