Topping Makeover WINS BEST IN SHOW!

So I woke up this morning to an epic fail on the meringue.  Not only had it weeped, but it was beading pretty badly.


I thought about keeping it on and presenting it as is, but as my husband said, “you’re not going to be happy.”  So I asked him very kindly to pick up some heavy cream when he made the grocery run.

Meringue topping was scooped off and replaced with a lovely piped whipped cream:


  • 1 cup heavy cream
  • 1/2 tsp vanilla extract
  • 2 Tbsp confectioner’s sugar (icing sugar)
  1. Beat on high until soft peaks form
  2. Scoop into piping bag fitted with large round tip
  3. Pipe dots around edge of pie and make your way towards the center

Competition was tight.  I won by 1 point gained by having the best presentation!
